Cupcake Project: Lemon Meringue Cupcakes

It's no secret that I adore the Wilton company and their products. I also adore their recipes which, I hope, are making me a better baker. I came across this adorable lemon meringue cupcake recipe which looked inventive, tasty and a challenge. The original recipe can be found here. If you try it at home, please send your pics! Ingredients:

Cake

  • Non-stick vegetable oil spray
  • 1 box ready-to-use refrigerated pie crust 14.1 oz
  • 3 cups sifted cake flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 sticks butter, softened 10 tablespoons
  • 1 3/4 cups granulated sugar
  • 2 eggs
  • 2 tablespoons finely grated lemon zest from two lemons
  • 1 1/4 cups buttermilk
  • Filling
  • 1 jar lemon curd
  • Icing
  • 1 tablespoon + 2 teaspoons of meringue powder
  • 1/3 cups cold water
  • 1/2 cup granulated sugar, divided


Instructions:

step 1

Preheat oven to 350°F. Prepare muffin pans with vegetable pan spray.

step 2

On a lightly floured surface, unroll pie crusts and roll into 13 in. rounds. Cut with Round Comfort-Grip cutter. Reroll scraps and cut again for 24 rounds. Press one round into bottom and up sides of each pan cavity. (Dough will not come all the way up the side of the cup).

step 3

Bake 15 minutes or until light golden brown. Remove from oven. Cool completely.

step 4

In large bowl, combine flour, baking powder, baking soda and salt; set aside.

step 5

In second large bowl, beat butter and sugar with electric mixer until light and fluffy. Add eggs and lemon zest; mix well. Add flour mixture alternately with buttermilk, beating well after each addition. Spoon batter over cooled pie crusts, filling cavity 3/4 full.

Bake 24-26 minutes or until toothpick inserted in center of cupcake comes out clean. Cool cupcakes 5 minutes. Loosen sides of cakes with small spatula and remove to cooling grid to cool completely.

step 7

Cut a hole approximately 1 in. wide x 1 in. deep with paring knife in the top of each cupcake; fill with lemon curd.

step 8

Position oven rack 8-10 inches from top of oven. Preheat broiler.

step 9

For icing, whip meringue powder, water and 1/4 cup sugar in large bowl with electric mixer on high speed for 5 minutes. Gradually add remaining sugar and continue whipping at high speed 5 minutes or until meringue is stiff and dry. Pipe a 1M swirl of meringue on each cupcake. Place back in muffin pans or on cookie sheet. Broil 30-45 seconds, or until meringue is lightly toasted.

There are five of them in the room. However, there are six of them at the mall!

Having already received the Dessert Decorator Pro, I knew that the Practice Board was the next step in perfecting my non-existent cake decorating craft. I'm old skool and not above slathering frosting on cupcakes with a butter knife and saying, "Dig in..."

As a beginner I wanted to start off slow and only tried a few practice sheets at a time. Even with the most diligent of work, Wilton gives you more than enough creative outlets to learn and try. The best feature of the the board is its easy clean-up. Just take a hot and soapy rag and wipe off the frosting; it will practically slide off.

Cupcake Project #21: How to make a Cupcake Bouquet


Cupcakes bouquets are in! And I've been wanting to make one for a while now. It would mix my love for arts, crafts and cupcakes. Even though my cupcakes will be from a box, I am sooo happy to have my Wilton Dessert Decorator Pro along for the ride to make the cupcake frosting roses. Not to mention all the practice that I've been getting with my Wilton Practice Board. Hopefully, my bouquet will come out just how I want it so I can post pics!

Wilton Dessert Decorator Pro Giveaway

First, I broke the device down to its core to see how many components we are talking here and how user-friendly is it. If I can understand the device, I can use it to full capacity. It's dishwasher safe designs and rotating cylinder  provides a very sturdy device that is easy to fill and clean. 




Once I put it back together I filled the silver cylinder with icing, placed it into the plastic holder and topped it with the ergonomic pump. I then placed the coupler and desired tip and was ready to frost. Gripping the handles just right, my fingers rested easy and with a few pumps to get the frosting down my cupcakes were being bathed in beautiful stars, swirls and even rose petals. 



The first cupcake that I frosted was a beauty. I was proud of myself and eagerly tried out the other tips. In total I used 5 of the 6 tips provided and had fun with it. No more hold bulky bags that can burst and even leak frosting. When I ran out of frosting, I was dismayed because the device was so much fun and made frosting a joy.



But after all my fun, it was time to clean up and I was eager to see how this thing stood up to my dishwasher. After breaking down the components and putting the tips in the dishwasher safe bag, I was pleased to see that the stainless steel cylinder and plastic components looked brand new upon completion. No streaking, spots or baked on frosting.

Cupcake Project #16: Beach Ready Cupcakes


A few months back I saw this YouTube clip from www.SweetWise.com and I instantly fell in love!  The clip seemed so easy that even a Critic could do it. Everything from the crushed wafers to replicate sand, to the blue color mist for an ocean scene, I'm digging this project. Here's your supply list:
