A few months back I saw this YouTube clip from www.SweetWise.com and I instantly fell in love!  The clip seemed so easy that even a Critic could do it. Everything from the crushed wafers to replicate sand, to the blue color mist for an ocean scene, I'm digging this project. Here's your supply list:

The Cherry Blossom Showdown!


Spring is in the air and so are the cherry blossoms! Between now and the end of April DC will be flooded with tourists who have an incurable case of cherry blossom fever. Review: Recently I read an article that encouraged food bloggers not to use the word 'addictive' to describe food. Clearly they haven't tasted Georgetown Cupcake’s cherry blossom cupcakes! These cupcakes were lathered in luscious cream cheese frosting and supported by soft clouds of bourbon vanilla bliss. Each bite provided a chunk of fresh cherry; and each cherry felt like a kiss on my tongue’s taste buds. Even the almond-fondant flower was fresh and utterly craveworthy. By the end of my undertaking I had a Jerry MacGuire moment: “Georgetown Cupcake...you complete me”

Review: Sticky Fingers Bakery is awesome and just when I think that they can’t get any more awesome, they surprise me. Enter Kamber: the specialty cake decorator at Sticky Fingers Bakery who personally made the sampled cupcake for me. The cake was smooth and the frosting light and fluffy. When I bit into this cloud of cupcake, a tart cherry filling came out which rounded-out the sweet almond crème frosting. Even my hand painted fondant flower tasted like a fresh lemon fortune cookie. Sticky Fingers I *heart* you!

Review: Aaaah Sprinkles…my beloved Sprinkles whom I repeatedly boast about and dream of. Although the cake was good my spidey senses were telling me that they’ve fallen off a bit. Not like Whitney (Houston-R.I.P.) back on the pipe fell off but more like J-Lo after she broke up with Marc Anthony fell off. It can stand on its own but would be better together. Overall the cake was a bit dense and the frosting tart. A tad too sweet for me but I gobbled it down nonetheless. Sprinkles I still love you...but please come back home!

Review: In an e-mail exchange with Teresa Velasquez, head baker and owner, Velasquez noted that the recipe used for her cherry blossom cupcakes was handed down to her by her grandmother. Although I have a tender spot for familial recipes, I can’t help but wonder if the recipe was developed during war time when butter, milk, and sugar were sparse? It pains The Critic to give a bakery on the level of Baked and Wired such a low score. Although I was happy to see that the line forming out the door was being taken care of quickly and attentively (unlike in previous visits denoted here), ultimately the cupcakes had no flavor and were the consistency of gummy dough. I think that they were having a bad day...

Score: 2.0

Finally, I would like to give a huge "Thank you!" to the staffs of Baked and Wired and Sprinkles. When I arrived to pick up my cupcakes I saw lines wrapped around the corner. Ordinarily I would have waited until my turn in line, but this was an emergency and I needed to get in and out. Both staff's honored me pulling rank as The Critic and had me in and out in a jiff...much obliged folks!

Cupcake Project #14: Peach Tea Cupcakes

Today is National Peach Cobbler day!! 
Aside from cupcakes (and cake in general), I would have to say that peach cobbler is The Critic's favorite dessert. I've scoured the net looking for an awesome peach cobbler cupcake recipe however, to be honest, the thought of a peach cobbler cupcake sounds slightly abusive to cupcakes. I've successfully eaten peach cobbler ice cream with bits of pie crust and even an awesome peach cobbler milk shake from- God's gift to The Critic- Chik-Fil-A. But a peach cobbler cupcake? Not sure how I feel about that....


Anyway, what I did find was a yummy peach tea cupcake with lemon cream cheese frosting....now we're talking!

Peach Tea Cupcakes

Peach Tea Cupcakes
Yield: 18 cupcakes
Tea-Infused Butter Ingredients:
1 cup unsalted butter
32 grams (about 1/3 cup) whole leaf Earl Grey tea
Directions:
In a small saucepan, melt the butter on medium-high heat until just melted.
Add the tea leaves.
Continue heating the mixture for about 5 minutes on low heat.
Remove from the heat and allow to stand for another 5 minutes.
Pour the mixture through a fine sieve, pressing hard on the tea leaves to squeeze out as much butter as possible.
Let the butter come to room temperature and refrigerate until it is no longer liquid or until ready to use.
Cupcake Ingredients:
1 ½ cup sugar
Zest of 1 medium-sized lemon
2/3 cup tea-infused butter
3 eggs
½ tsp ground ginger
1 ½ cup all-purpose flour
½ cup milk
1 cup finely chopped overripe peaches
Directions:
Preheat oven to 350 F.
In a small bowl, mix sugar and lemon zest.  Allow to sit for at least thirty minutes.
In a large bowl, cream tea-infused butter and lemon sugar.
Beat in eggs, one at a time.
Beat in ginger.
Beat in flour, one cup at a time, alternating with milk.
Fold in peaches.
Fill cupcake liners 2/3 full.
Bake for 20 minutes or until cupcakes bounce back when lightly touched.
Lemon Cream Cheese Frosting Ingredients:
12 oz cream cheese, room temperature
¾ cup unsalted butter, room temperature
3 cups powdered sugar, sifted
¾ tsp lemon extract
Fresh mint leaves for garnish
Directions:
In a large bowl, mix cream cheese and butter until light and fluffy.
Mix in powdered sugar one cup at a time until well integrated.
Mix in lemon extract.
Spread or pipe onto cupcakes.
Top with mint leaves.

Georgetown Cupcake: The Easter Egg Dozen

Easter is my favorite time of year! Everything from the elaborate family dinners to the pastel dresses and wide-brimmed church lady hats, Easter is the season to shine!

This year I would be blessed with a special treat: The Easter Egg Dozen from Georgetown Cupcake. This box was filled with two flavors of cupcakes: Valrhona chocolate with a fudge center and caramel cupcakes with a caramel center. Each cupcake was adorned with rich buttercream frosting in assorted pastel colors and topped with a fresh Easter egg shaped fondant.

The Easter Egg Dozen from Georgetown Cupcake was delivered by Jessica who was more than kind to trek out to suburban Maryland. She not only delivered the box but personally checked each box and made sure that the cupcakes were not damaged in the process of transporting them.

Perfectly coiffed and puffed in Georgetown Cupcake regalia, I almost didn’t want to open up the packaging because it was so beautiful. But I did and in doing so I got the same feeling that I did as a child tearing into my Easter egg baskets eager to see what treats my little heart would receive. Much like the cornucopia of Zeus and the prosperity of Easter, these cupcakes were overflowing with goodness.

They were all so beautiful that I didn't know which one to eat first. My sister and I agreed that I should try a purple cupcake first which happened to be a caramel cupcake with caramel filling. The cupcake was ridiculously fresh and oozed the perfect amount of caramel center. As the yummy caramel slid down my tongue, washed in buttercream, I stopped and did a happy dance.

Traditionally I'm not  a fan of chocolate but the Valrhona chocolate cupcake became my favorite in the box! The cupcake was the perfect amount of chocolate balanced with the sweetness of buttercream. The ooze of the lava fudge center made the overall experience that much sweeter.


As I nom-med on my fresh pink fondant egg, surely coming down from a sugar high, I reluctantly shared one of my cupcakes with my mother who- incidentally- doesn't care for cupcakes. The cupcake church had spoken and there was a new convert in the congregation. She couldn't get enough of these cupcakes and spent the majority of Easter weekend talking specifically about Georgetown Cupcakes. She swore they were made with crack but let's hope not...Georgetown is too far.

Cupcake Project #13: Cherry Blossom Cupcakes

One of my fondest childhood memories was being nine years old and deciding to save enough of my money to buy my mother her favorite cherry sour ball candies from Fannie Mae candies. I remember the joy on her face; how much she enjoyed eating them and sharing them with me. I still love cherries and anything cherry flavored. I pinch the cherries off of my friends drinks; I ask for a splash of grenadine in my cokes and now, there are cherry cupcakes inspired by Cherry Blossoms. Recipe for Cherry Cupcakes : *Makes 2 dozen cupcakes

Ingredients:
1 cup unsalted butter, softened
4 eggs, separated
2 cups sugar
1 cup whole milk
¼ teaspoon almond extract
4 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
4 tablespoons maraschino cherry juice
1 cup maraschino cherry halves (optional, but I choose not to include)
Few drops red/pink gel food colouring (optional)











Method:
Preheat oven to 350 degrees. Cream the butter and sugar until very fluffy, about 5 minutes. Sift dry ingredients together and set aside. Set egg whites aside to be beaten. Add the egg yolks to the creamed mixture, one at a time, mixing well after each addition. Mix in extract. Add dry ingredients and milk, by alternating (beginning and ending with dry) until just combined. Fold in stiffly beaten egg whites, and the cherries/juice. For pinker cupcakes, add a few drops of pink gel food coloring to the batter.


Using ice cream/cookie scoop, fill white cupcake liners (if doing my decorated version, otherwise any liner of your choice) about 2/3 full. Bake until inserted toothpick comes just clean, about 18-20 minutes, but take care to not over-bake. As soon as you have removed cupcakes from oven, carefully and cautiously (at the risk of stating the obvious, they’re super hot!) remove each of them from pan and place on wire rack.


*Critic's Tip: Frost with a basic buttercream (butter, confectionary sugar and vanilla flavoring) and add maraschino cherries to the mix for a cherry flavoring.

Sweet Tooth Bakery

Sweet Tooth Bakery is a close knit and family owned bakery located in the industrial warehouse section of Capital Heights, MD. It's bus accessible with the nearest metro station being Addison Road Metro. I decided to drive and found plenty of parking upon my arrival.

Walking into Sweet Tooth Bakery I saw smiling faces. One of which was a couple picking out their wedding cake. The other was a mother gushing over her daughter's strawberry-filled birthday cake which was decorated pink and purple and shaped like the number 12.

While I scoped out the treasure trove of goodies, I saw that there were two separate cases filled with cupcakes. One case had traditional fare such as chocolate, vanilla, coconut, lemon and German chocolate cupcakes. The other had more specialty cakes like banana pudding, strawberry shortcake, toffee crunch and several others. While drooling, I spotted a display cake shaped like a Louis Vuitton purse. I've been looking for such a creation for some time and knew that these folks were skilled.

The sweet faced woman behind the counter saw my keen interest (and slobber) and asked, "Baby, whatchu want?" I replied, "One strawberry and one banana pudding cupcake please". She was so sweet; and she handed me my change in a jiff while she packaged up my goodies.

Arriving home, I immediately tore into the strawberry cupcake. Although the frosting was great, not too sweet but moist and flavorful, I was disappointed that the cake tasted really industrial as if it were from a commercial cake mix. I put that memory aside and moved on to the banana pudding cupcake; hanging all my hopes on it. I wrapped my lips around its sweet curves and found it's pudding like flavor and super soft texture delectable. However, it also reeked of commercial flavorings.

Sweet Tooth Bakery is a good bakery and although I understand that times are hard and bakeries are making cut backs, the purpose of going to a bakery is to get the freshly baked experience. Granted a full service bakery usually reserves their highest quality ingredients for their special ordered products (wedding, baby shower and birthday cakes) but the retail products should act as commercials not one-hit wonders. Overall I enjoyed Sweet Tooth bakery, their customer service, variety and prices. I will be back!

It's Cherry Blossom (Cupcakes) Season!

It's Cherry Blossom season here in DC and everyone is a buzz! This year commemorates the 100 year anniversary of the cherry blossoms and their placement near the tidal basin. To celebrate, cupcakeries are debuting their own cherry blossom inspired cupcakes.
